EVERYDAY FOOD

My love for cooking comes in starts and fits. I always grab the latest Everyday Food that Martha Stewart puts out and I have to say that sometimes the mag is a dud for me but not the April issue.

I've been wanting to learn how to cook fish for so long but for some reason I've been scared to try. I have no idea why fish scares me, or should I say scared me because I tried it and it was beyond easy. The recipe is tilapia and quinoa with feta and cucumber. I called my husband at Costco, where he works and asked him to bring home some fish. He brought me halibut. I had the quinoa already but had never made that either. I was impressed with the super food status of quinoa. It's low in carbs and a complete protein and mixed with feta, dill and cucumber it's delicious. The whole meal was so good and I can't wait to make it again.

Next I tried the caramelized onion and lentil soup recipe. I had lentils in my pantry but I don't remember buying them. They cook in one hour so it's easy to get the dried lentils and make them yourself, it's cheaper than buying them already made. The dollop is plain yogurt that adds some tang to the dish. Another success!!
Last night I tied Emerils chicken patty pockets also in the Everyday Food magazine but I forgot to take a picture. They were good and tasty and healthy. Next up is the home made tomato soup recipe, one that I'll probably be eating alone. My family has picky palates.
